Zacusca is one of Romanians’ favorite dishes in autumn or winter. It is a tasteful mixture of eggplants, red peppers, onions and tomatoes, preserved in jars. Similar vegetable spreads are popular in other Balkan countries. In Serbia, it is called Ajvar, and it is cooked with garlic and chili peppers. In Bulgaria, it is called Lutenica, and it is spicier than the Romanian spread.

The best way to cook it would be outside on a campfire in a very large pot. Romanian traditional belief has it that cooking it in a large quantity will make zacusca taste better.
